Mac N Cheese

Friday I was bored at home and thinking about what to make for dinner that was easy and cheesy. I wanted to make something I have never done before and then it hit me… why not  make mac n cheese!? So I did, and it turned out really good. It was simple and quick and better than the boxed Kraft mac n cheese you can buy at the store. Not to mention its always fun to make your own food!

I got this recipe off all recipes. All you need is :

8 ounces elbow macaroni

2 tablespoons butter

1/4 cup all-purpose flour

2 cups milk

1 cup shredded Cheddar cheese

8 ounces cubed processed cheese food

Then what you do is

In a large pot with boiling salted water cook elbow macaroni until al dente. Drain.

In a medium saucepan, over medium heat melt butter or margarine. Whisk flour and stir vigorously. Add milk and cook until thick and bubbly, about 5 to 7 minutes. Add cheeses and stir until completely melted.

In a large bowl mix together the drained pasta and cheese sauce mixture. Toss to coat evenly.

Pour into a greased 2 quart casserole dish. Bake in a preheated 350 degree F (175 degrees C) oven for 30 minutes. Let stand 10 minutes before serving.

It only takes 45 minutes to cook this and about an hour to make it. I seriously recommend you try this recipe out! Everyone that has made it said it was great and they have made it repeated times. I know I will make it more than once. I added a little parmesan cheese to the top of mine, but that is only because I am OBSESSED with cheese, and I also put some tobacco on it. 😉 I mean my family loved it and asked me how I did it and its this simple! shrimp you can only LOVE

If you are a fan of shell fish then you HAVE to try this recipe! My dad was recommended it by one of our cousins but she actually told him to go to the restaurant to get it. Instead of spending all that skrilla on a shrimp dish at some restaurant, he decided to make it. It was about half the price and just as good! Ever since my taste buds were introduced to this, they have been craving it. I mean I have dreams about them. Seriously the BEST shrimp I have ever had.

Anytime that I want to make something that is spicy and sort of sweet at the same time, I make these. The recipe is just the perfect combination. It has the right amount of spiciness and the right amount of sweetness and to top it off, its garlic-y:) We all know how I love me some garlic! Anyways, if you don’t love this recipe then I don’t really know what to do about it. Everyone that has tried it loves it and asks me for the recipe themselves. So you’re going to have to do something for me and take a chance and trust me!

First of all to make this recipe you are going to have to get two different dishes that you can put 2 cups of flower and 1 cup of corn starch in with a pinch of Kosher salt; this is if you are making about 2 pounds of shrimp. Otherwise if you are making one pound of shrimp then its 1 cup of flower and 1/2 cup corn starch. Its a 2-to-1 ratio. Then a separate dish for 2 eggs, beaten with some salt and pepper in it.

Once you have these two dishes prepared get your frying pan out. Put some olive oil in it; just enough to coat the bottom of the pan. Then you need to turn the stove on to heat the oil up. Then get your shrimp; make sure you wash it and take the tails off of it. Otherwise you will be eating crunchy nasty shell :/ gross. Take your shrimp and coat them with the egg and put them in the flour so they have a nice coat and are covered. By this time your pan should be heated so you want to put your shrimps in the pan and cook until they are brown on both sides. Have a plate with a paper towel on it so you can put the done shrimp on it to drain the excess oil.

While you are waiting for the shrimp to get done in a separate bowl combine 2 cups Mayonnaise. 1 cup Asian Chile Sauce. 2 Tblsp of honey. Salt and pepper. And some Sriracha… only if you want it to be more spicy. Once this is mixed together it should look pink. Then take your done shrimp and put them in the sauce. Mix it all up so that the shrimp is covered with the sauce. Then put them on a plate and eat up! Don’t forget to share if you can!!!

This is a good appetizer for a party or for dinner if you are starving. I sometimes just eat this with dinner with something else as the main dish. Just writing about it makes me want it, I’m thinking about going to the store right now just to make some for dinner 🙂 Anyways, I hope you all enjoy this recipe as much as I do! let me know what you think!!!

Eggs Benedict

Its a tradition to dye eggs and go hunting for them and then see who got the most in their Easter baskets for some families. But in my family, it is a tradition to eat Eggs Benedict for Easter breakfast. YUM!  Usually my dad makes it, but this time I took the liberty and decided to take control in the kitchen and give my family a great breakfast! Along with some fresh strawberries and cuties, I would say breakfast was a success.

There really isn’t that much to making Eggs Benedict, especially when you cheat a little and make the Hollandaise sauce from a packet :D. Basically all you have to do is poach your eggs, get some canadian bacon and cook it up a little (its usually already cooked unless you get it raw), toast your english muffins, and make your Hollandaise sauce.I thought it was going to be quite the challenge to poach the eggs but we actually have a little egg poacher pan that does it for you so it made my life easier!

After you have all of these ingredients and it all cooked up, you want to take your english muffin,and if you want you can do what I did and put a slice of cheese on it, and stick it in the toaster oven for a minute or two. This will give your enlist muffin a bit of crispiness and melt your cheese too. Then put your Canadian bacon on it along with the poached egg on top of that and then cover it with some Hollandaise and sprinkle nutmeg on it! If you are a hot sauce fanatic like me then Tobasco is what I like best to put on it. It gives the breakfast a little extra kick that I LOVE. Otherwise just serve it up with some fruit, I used strawberries and some cuties. Sometimes it is even great with some asparagus and if you want, you can even make some hash browns to go with it. I have never done this but if you are a big breakfast person then maybe you would like it!

The whole meal turned out great! I was looking forward to having this since this last week and when I finally got to have it, I celebrated:) I love having family meals and on a holiday like this, with a meal like this, there is never a better time to have one! cake with cheese= cheesecake!

My favorite food in the world has to be cheese. And when I combine it with some other ingredients I can make a delicious cheesecake! This cheesecake happens to be better for you than your normal slice from Marie Calendar’s or the cheesecake dessert list at the fancy restaurant everyone talks about, so that is definitely a bonus! I was lucky enough to come across Kelly’s blog about eating healthy and found this awesome recipe for Skinny Strawberry Cheesecake.

My mom asked me to make a nice dessert for after Easter dinner with the family. I figured since we are probably going to have a lot of food for dinner, why not cook something light for dessert? So I decided to make this, it is really simple and looks so good! I haven’t gotten to eat it yet because I haven’t had dinner but after I taste it I will be sure to let you know what it’s like!

You only need 6 ingredients for this dessert… It’s that simple! No baking it like the usual cheesecake and you don’t have to wait a whole day until it is ready to be eaten. So, for this strawberry cheesecake you will need:

8 oz. Cool Whip fat free

1 8oz. package of fat free cream cheese

one 9 inch fat free Graham Cracker Crust

1/4 cup of sugar or splenda

2tsp of vanilla extract

and as many strawberries as you want to cover the top of it and add on when eating 🙂

What you want to do first is mix together, in a bowl your cream cheese, sugar, and vanilla. Then when they are all fluffy you want to add in your cool whip. Make sure to blend these together until it is smooth and creamy but still thick. Then take your pie crust and pour the mixture into it, even it out so it’s all even in the crust. Then put it into the fridge for a few hours or until it is firm and enjoy! If you want you can add a little extra strawberries to it so you get more of a berry taste.

See, it was simple and painless.  Unless you are lactose and tolerant, why shouldn’t you make this? If you do, let me know how you like it and I will do the same!

Something Simple

Although this is very simple and only a small portion of the meal, its quite amazing. It is this broccoli recipe I got from a blog and I fell in love with the very first time I made it. There is something about it that makes me want to make it for every meal but I have to try new things out ever now and then.

So this recipe, like I said, I got from this blog called Amateur Gourmet by Adam Roberts. He has some great recipes on his blog and this is definitely one of them. He calls it “the best broccoli of your life” and I don’t think he is wrong in saying this! There is a crunch, there is a zest, there is a firm, and there is CHEESE. Once you taste this broccoli, (which you must) I think you will love it as much as I do! alright so enough about how absolutely amazing it is and on with the recipe!

You want to first preheat your oven to 425. Then get like 3 bunches of broccoli and cut it into florets leaving the stem on. I know a lot of you don’t like to eat this part but trust me, its a must have to this recipe. SO after you have your florets cut, if you wash them make sure they are COMPLETELY dry, otherwise they won’t get the crunchy texture to them. I usually don’t wash mine since it is just going in the 425 degree oven. This saves some time and a lot of paper towels.

Now you have a preheated oven and DRY broccoli florets. Next you want to toss your broccoli in olive oil and dash with salt and pepper. Make sure to put your broccoli on a cookie sheet covered with tin foil so you don’t make a mess on your counter top! Sometimes instead of tossing them on a cookie sheet I get a large bowl and do it in there to make sure there is a thin coat on all of them.  Then get some garlic, about 4-5 cloves, peel and slice them then add to your cookie sheet of broccoli.

Next is the hard part…waiting. By this time all you want to do is eat and taste these amazing little trees but you have to slow your roll and place your cookie sheet in the oven for about 20-25 minutes. You want to get your broccoli crispy and tender at the same time. When the tops start to look brown, you’re about there.

After what seems like forever, take your broccoli out of the oven and pay attention because this is when it gets really good. Take a lemon and a cheese grater and zest (grade) the lemon all over the broccoli. Then with the same lemon squeeze some of that fresh juice over it as well. Take your olive oil again and sprinkle 1.5 Tblsp over it and then add the finishing touch, the cheese! Parmesan cheese is what I use and I usually just follow the directions Adam has on his blog and use 1/3 cup of fresh grated Parmesan.

All of these ingredients combine to make the “best broccoli of your life” and you will totally agree with me on this when you try it! I especially love the crispiness it has to it and then the lemon zest and parmesan cheese are also my favorite part to this dish. Zesty Chicken

There is just something about lemons that I love. I don’t know if it’s the color, the smell, or the flavor but I just really like it. I love cooking with it too! It gives this certain kick to the dish and a taste that is great. When I don’t know what else to add to a food, or if something is just kind of plain tasting I usually squirt some lemon on it and it satisfies my taste buds.

Today I am going to be making a really simple chicken that is bursting with flavor and It is only 4 simple ingredients. Lemon pepper, olive oil, chicken, and salt. I know this sounds like its going to turn out really plain and not good at all but trust me… This is SO good you will want to take it with you for lunch tomorrow! Along with the chicken I also made a spinach salad topped with salad dressing. You could also make some broccoli or asparagus to go with this which would be awesome!

So to start off you need some chicken breasts. Cut them in half so they aren’t so huge and are easier to cook.Then take the chicken and coat it with olive oil. Rub some lemon pepper on it and and sprinkle with salt. You don’t need a lot of this since the lemon pepper has such a great taste.  Turn your grill on and place the chicken on it. Cook for about 10 minutes on each side or until the chicken is just white in the middle with no pink.

The salad I made a was just spinach, red onion, tomatoes, and goat cheese. I put some Italian dressing on it and had like 2 pieces of chicken. This was a very satisfying meal and I loved the way the chicken came out. I hope you guys get to try this recipe! It is so simple and takes all about 15 minutes to prepare and cook. Pizza my Heart

This is some seriously delicious pizza! Its home made and topped with some awesome ingredients. I know you can’t wait to try it so I’ll skip the introduction for now and get to the point.

What you will need (how much of each depends on how many people you are feeding) for the toppings:


Green and red bell pepper


White onion


Mozzarella Cheese

Parmesan Cheese

Black Olives

chop all of these up as finely as you would like

Before you put the toppings on you have to make the dough and the marinera sauce. For the marinera you will need:

1/4 C Onion Finely Chopped

4 Cloves of Garlic minced

2 tsp Parsely

4 Tblsp Olive Oil

2 cans stewed or diced tomatoes that are seasoned in Oregano and Basil

Red pepper flakes to taste

1 8 oz. can of Tomato Sauce

8oz of Chicken Broth

2 tsp Pesto

The most important thing for the pizza is the dough! Now I made the dough in a bread machine so if you don’t have one then you can probably look up a recipe online! For the dough, depending on how much you want to make and the recipe your machine calls for you will need no matter what


olive oil

warm water



dry yeast


make the dough by following the directions in the recipe book of the bread machine. When the dough is done cover it in olive oil then lay it on a floured surface. Roll the dough to get it as flat as you can. The dough will keep bouncing back to its original shape so you have to toss the dough (if you can) and then hang it so it stretches out. Then when this is done put it on a pizza pan and top with your marinera sauce.

To make the marinera sauce.. which is amazing by the way 🙂 you have to Brown the onion, garlic, and parsley in a sauce pan in olive oil. Then you add the cans of the seasoned tomatoes and smash them into the browned mixture. While the pan is still on add some red pepper flakes, the tomato sauce, chicken broth, and pesto. Simmer for 1 hour on low, then let it sit for 3o minutes to cool. Spread it on the dough before putting the toppings on. 

The next step is fun. Shred your cheese and spread it all over the pizza dough with the marinera sauce on it. Then take your topping ingredients and put as much of those on that you would like. Preheat your oven to 375 degrees F and then cook the pizza on the pizza pan for about 15 minutes. After 15 minutes take the pizza off the pan and put it directly onto the oven rack for another 10 minutes or until the crust is crispy.

Remove the pizza from the oven and let it cool for 10 minutes. Then sprinkle some Parmesan on top of it, and if you’re like me some hot sauce, and enjoy!

I am really picky about the pizza I eat, especially since I got back from Italy. The pizza we can order here is so expensive and not even that good, so I decided to make my own pizza one day and it turned out great! My family and I love it and it is so easy to do and you can customize your pizza so that there are all of the delicious ingredients you like on it! For the healthy people you can even make the dough whole wheat! And you don’t have to put the cheese on it if you don’t want. In fact I almost left the cheese off and ended up putting it on after all the veggies were already on it, whoops!
